Plastering stacked concrete pavers then tiling face

We have a planter bed that is on top of stacked concrete pavers ( 36”x12”x8”). The wife wants to turn the concrete pavers to a smooth wall that we can then plaster tiles to. I’ve never done any tiling or cement work before. This seems like a low risk project to learn more about tiling and cement/concrete/mortar/masonry. I just want to know if there is a simple way to do this and potential watchouts like cracks or water issues

I’m thinking I can just pout a cement/sand mixture around the pavers, let it cure, then smooth exterior with mortar, then apply thinset and tiles. Was thinking I could seal the gap between foundation and pavers with non sag sealant.

My questions: Do I need to waterproof the cement? Should I use concrete or cement? Would it be better to just get some chicken wire then use a trowel to make a thin cement or mortar surface around pavers?
