9% cider!?
I just racked my first ever batch into secondary and took a gravity measurement. Starting gravity was 1.055, after exactly 2 weeks with red star champagne yeast, ending gravity was 0.998. My chart puts that at over 9.2% by volume. I was expecting 5-6% am I reading this wrong somehow? Is my chart inaccurate? Do I just have some crazy beginners luck?
