Why do they do this every season

I'm not sure if it's all scripted, but I'm so annoyed. Every season there's one girl or for season 3 one guy who takes all the screen time and always has 3 options to choose from. It's annoying slightly I want to see the other couples. I want to see the friendships built. The camera is just always glued to the it girl or it boy of the show. As well my favourite contestants are always the ones who don't have many options so they never get screen time. As well I don't like that there's a girl or a guy left over who cant match with anyone it feels unfair.
