Why do some players mainly dodge and rarely parry?

The parry window is hard yes, but even if you get chip damage, 90% of the time you can attack the enemy again and regain HP. With dodging, if you mess up, you cannot regain HP. Plus you get less time to attack the enemy. Yet i've seen comments about people getting through the game without doing much parrying at all until towards the end. if it works, power to you! Just curious as to what makes that preferable to parrying.

*Puppet Devouring Green Monster-

  1. there's an attack where the dude is in push-up formation and starts whipping vines at you. I've only seen gamers run away from the attack when it's one of the easiest attacks to build stagger damage bc you parry the vines and punish with a heavy at the end
  2. the running charge attack. the timing can be tricky but you can stop him from doing it 2 more times if you get it down instead of trying to figure out where to dodge him
  3. jump attack

UPDATE: totally get why non-sekiro souls games discourage parrying BUT this one has health-regen. Still, there is a certain..series of fire attacks that will kill you if you dont parry it really well- i get why you gotta dodge there
