Can I sue the other driver ?

What happens if my parked car gets hit by another car and is totaled? Their insurance offered me $2,500, (his cover limit is 5k and there were another 2 vehicles damaged) but the value of my car is $8,000. On the other hand, I didn’t have insurance (big mistake).
