Rice is the best carb to cook with ADHD

One cup rice, two cups water, pinch of salt, bring to boil, stir, kill the heat, add lid and forget about it until all the other food is done.

The danger of it boiling over is only there at the start and you need to be there to stir anyways. Bonus points if you heat the water alone at first.

Pasta always seem to boil over for me and/or they overcook. Potatoes can overcook. Oven fries can burn.

Air fryer and rice cooker seem perfect for me from what I've heard but money.

Edit: Fiiiiine I will buy a rice cooker. Reading the comments is great, so much good advice and relatable stories but it's hidden behind all the people telling me to get a rice cooker.
